Mustard Roasted Fingerling Potatoes and Onions
1 lb fingerling potatoes, halfed or quartered depending on size
(if these are not available, use small red and small yukon golds)
2 med-small yellow onions in slices, halfed
2 tablespoons olive oil
2 tablespoons WHOLE GRAIN mustard (the better the mustard, and the more whole grains there are, the better these will taste. DO NOT USE YELLOW MUSTARD)
salt and pepper to taste
preheat oven to 375
put your onions and potatoes on a baking sheet
i normally mix the olive oil, mustard, salt and pepper together in a measuring cup and stir together before dumping it over my potatoes and onions. mix VERY well, make sure all your veggies are coated with the mustard mixure.
bake for 25 minutes. it COULD take up to 40 minutes, depending on how small your potatoes are, this is one of my favorite, easy recipes.
